Good storage keeps dairy tasting fresh and reduces waste. These simple habits work in most Indian kitchens.
Milk
- Refrigerate milk as soon as it arrives, and keep it away from the fridge door where temperatures change most.
- Follow the instructions on the pack about boiling and use-by dates.
- Keep milk covered so it does not absorb other food smells.
Curd
- Store curd covered in the fridge and always use a clean, dry spoon.
- Curd naturally becomes a little sourer over time — that is normal.
Paneer
- Keep paneer in an airtight container in the fridge.
- For softer paneer, soak it in warm water for a few minutes before cooking.
When in doubt, follow the storage instructions and dates printed on the pack.
